Designing a banana chip production line requires comprehensive consideration of multiple aspects such as raw material processing, processing technology, equipment selection, degree of automation, hygiene standards, and packaging requirements. The following is a typical process and key equipment configuration of a complete banana chip production line:
1. Raw material pretreatment section
(1) Banana reception and sorting
Equipment: conveyor belt, sorting table (manual or visual sorting system)
Process:
Fresh bananas enter the workshop through the conveyor belt, and rotten, overripe or mechanically damaged raw materials are removed.
Grading by maturity (usually 7-8 ripe bananas are selected, with yellow and green skin).
(2) Cleaning and peeling
Equipment: bubble cleaning machine, high-pressure spray device, automatic peeling machine
Process:
Bananas are soaked in clean water and sprayed to remove surface dirt.
Mechanical peeling (to avoid damage to the flesh), the remaining peel is recycled through the waste conveyor belt (can be used as feed or organic fertilizer).
2. Slicing and color protection
(1) Slicing

(2) Color protection

3. Dehydration/drying process

First stage: 60~65ºC hot air, time 1~2 hours (quickly remove surface moisture).
Second stage: 50~55ºC slow drying, time 4~6 hours (retain sugar and flavor).
(2) Optional process (crispy chips)
Equipment: vacuum fryer or low-temperature puffing equipment
Alternative: freeze-drying technology instead of frying (high cost but good nutrition retention).
4. Seasoning and cooling
(1) Seasoning (optional)
Equipment: drum seasoning machine or powder sprayer
Optional flavors:
Sweet: spray honey or syrup.
Salty: sprinkle salt, spice powder (such as cinnamon, chili).
(2) Cooling
Equipment: cooling conveyor belt (equipped with fan)
Requirement: cool to room temperature to avoid condensation after packaging.
5. Packaging section
(1) Sorting and quality inspection
Equipment: metal detector, weight sorter, manual quality inspection table
Standard: remove debris and burnt pieces to ensure no impurities.
(2) Packaging
Equipment: automatic packaging machine (nitrogen filling for freshness preservation)
Packaging form:
Bagged (aluminum foil composite film, light-proof and moisture-proof).
