The hydraulic vacuum tumbler is a modern equipment widely used in meat processing (such as ham, sausage, bacon, etc.). It is mainly used to accelerate the penetration of pickling liquid through vacuum, tumbling and hydraulic pressure processes to improve the taste, tenderness and yield of meat. I. Main structural components
Tumbler
Usually made of stainless steel, corrosion-resistant and in line with food hygiene standards, with baffles or paddles inside the cylinder to promote material tumbling.
Hydraulic system
The cylinder is driven to tilt, rotate or lift by hydraulic power, which is labor-saving and highly stable, suitable for large-scale production.
Vacuum device
Vacuuming (usually vacuum degree of -0.08~-0.1 MPa) avoids meat oxidation, inhibits bacterial growth, and helps the marinade to penetrate quickly.
Control system
PLC or microcomputer control, can set parameters such as tumbling time, speed, intermittent mode (forward-pause-reverse), with a high degree of automation.
2. Core working principle
Physical tumbling
When the drum rotates, the meat is repeatedly beaten and squeezed under the drive of the baffle, which destroys the muscle fibers and enhances water retention and tenderness.
Vacuum environment
Under vacuum, the meat expands and becomes loose, making it easier to absorb marinade, while reducing the risk of spoilage caused by bubbles.
Hydraulic assistance
The hydraulic system provides stable power, enabling the drum to tilt at a large angle (such as 90°) for easy discharge, reducing the intensity of manual labor.
